They have boutique hotels in the world's most sought-after destinations, from London to Singapore to Shanghai, and now the Unlisted Collection is bringing their brand of luxury cool to Sydney, with plans for new boutique design hotel The Old Clare Hotel unveiled today.
Housed in the historic Carlton United brewery in Chippendale's Kensington Street design precinct, the boutique hotel will open this August. The design pays tribute to the building's past, retaining an authentic industrial feel - albeit with a luxe designer edge. From the well-stocked bar in the reception area (the cocktail menu has already been devised) to the rooftop pool with sweeping city views, The Old Clare Hotel is set to put Chippendale on the map.
The hotel spans 62 rooms - but these aren't your ordinary small beige boxes. Instead, heritage timber panelling and the original exposed brick walls lend an industrial edge, with soaring ceilings for a sense of space. Guests will be invited to participate in cultural programs and poolside yoga sessions at sunrise. Sounds good to us.

It gets better: three restaurants are slated to open in the Kensington Street precinct in August, and boy, are they good. Former Momofuku Seiobo and Quay chef Clayton Wells (read our interview with him here) will open his first restaurant, Automata and Sam Miller, former executive sous chef at Copenhagen's multi-award-winning Noma, will also open his first solo venture, Silvereye. Plus, internationally acclaimed British chef Jason Atherton will launch his first Australian restaurant, Kensington Street Social, open for breakfast, lunch and dinner.
