What exactly is Gisele Bündchen’s ‘plant based’ diet and what are the benefits?

When it comes to picking the diet that is right for you it can be hard to figure out what actually works. You've got various blogs, nutritionists and 'health experts' preaching different eating lifestyles (sugar free, gluten free, vegan) and strict trends (5:2, FODMAP, keto); navigating it blind is seemingly impossible. One eating regime that seems almost manageable is the plant based diet - not to be confused with a vegan diet - the premise is simple, work from a foundation of leafy nutritious foods and add in small portion of grains and animal protein. Supermodel Gisele Bündchen and husband Tom Brady have been practising the lifestyle for years, and if it contributes to that glowing complexion and shiny mane, we're more than willing to give it a try. W Magazine spoke with the couple's former personal chef, Allen Campbell on all the perks of eating meals that are plant based.

The plant based diet is often confused with a vegan diet, which Campbell is quick to challenge. "When I say plant based, I don't mean vegan... Plants need to be the focus, that's where all the nutrition is," Campbell explained. "I look at whole plant based foods, that's the foundation of the diet, mostly green vegetables, green vegetables are the highlight of that diet. And then you look at whole grains, fruit, and other vegetables, all the herbs and aromatics and all those things that compliment for flavour. And then depending on the season, you bring in animal protein that are hopefully wild or organic and locally raised, but very small portions."

A huge factor of the plant based diet is cutting out dairy, says Campbell. "People have seen that as soon as they drop dairy they can breathe better [and] their skin looks better," he explains in the interview. The key to the diet is looking at food as fuel for the body, rather than as a flavour indulgence. "We eat food because we need to nourish our bodies," says Campbell, not to treat our bodies. Sounds simple enough.
