Every Sydneysider worth their (upmarket) souvlaki knows Alpha, the must-eat Greek on Castlereagh Street. What you probably won't know is that there's now a stunning new bar in the space above it; named - what else? - Beta.

The cavernous space, with its soaring vaulted ceilings and artfully crumbling brickwork, melds original Victorian-era details with luxe contemporary design by DS17's Paul Papadopoulos, who also did the fit-out for beautiful Alpha. The Grecian-inspired cocktails are just as extraordinary: try the Dirty Greek Martini (pictured below), a blend of Belvedere vodka, cucumber tomato tea, Noilly Prat vermouth and crushed Volos olives, shaken and served with a grilled horiatiki skewer.

Onto the food: guests at the bar will be offered modern Greek meze, from sweetbread popcorn with zhoug skordalia to Horiatiki Greek salad with feta jelly, candied olives and papara dressing.

Beta is open Wednesdays, Thursdays, Fridays and Saturdays, but we're calling it: this is one bar that's going to garner next-level waiting lists.
