Sydney prides itself on being a global foodie destination; there's not a week that goes by without the opening of a hot new eatery. And to be fair, our sparkling harbour city is home to many of the biggest names on the Australian chef circuit: Aria's Matt Moran, French culinary genius Guillaume Brahimi, brunch power player Bill Granger and iconic Quay's Peter Gilmore to name but a few. However, lauded Melbourne-based George Colambaris has been a notable absentee from that roll call of culinary talent, despite having 11 restaurants in his home town, ranging from the casual souvlaki joint Jimmy Grants to the award-winning fine dining Press Club (pictured above).
But now for the great news, in a recent interview Colambaris announced his first Sydney restaurant will open in early 2017: cue mouth-watering. The restaurant, named Elecktra, will be located in cool-kid Surry Hills and will feature the full roster of authentic Greek food that Colambaris is well-known for. It's about time George.
