Americans have gifted us a lot of food over the years. From hot dogs and sliders to cronuts and now even cheese ice-cream - usually, if our friends in the Northern Hemisphere are digging in - eventually, so are we.
And now, the latest craze to hit Sydney is the East Coast classic - the lobster roll. Brought to you by two WA boys - Love Tilly Devine's owner Matt Swieboda and childhood mate Tristan Blair, Waterman's Lobster Co in Potts Point is the latest eatery to tackle the New England-Style lobster roll.

While their menu may hero the classic lobster roll with lobsters sourced specifically from the cold waters of the Atlantic, the boys have been careful to incorporate some Australian flavours for locals unfamiliar with the American dish. "Waterman's is not the first place in Australia to offer lobster rolls, or Maine lobster, or even Maine lobster rolls, but we think it may just be the best - and the best value," explains Swieboda.

"The aim here is to produce simple, delicious food that makes you happy while you slug back keg wine and crisp, dry beer, or a flute of Champagne for the decadent," he adds. The Waterman's Lobster Co menu is short and sweet, consisting of seafood-based entrées like mussels and fish rilettes, the lobster rolls in Maine and Connecticut styles, and sides like fries or purple cabbage slaw.

Bolstered by a drinks offering overflowing with American cocktails, Australian and American beers and an impressive selection of Chardonnay (lobster's perfect wine match, just so you know), Waterman's is really bringing the perfect blend of American and Australian East Coast flavours.
Waterman's Lobster Co is located at 29 Orwell St, Potts Point and is open 7 days a week for lunch and dinner Monday to Saturday.
