Two of Sydney's top chefs go head to head for the ultimate ramen
Perhaps he's been watching too much Game of Thrones or maybe he just wants a Sunday off, but head chef Stephen Seckold won't be manning the kitchen at Salaryman, his ramen house in Surry Hills, this Sunday May 15 - instead, he's handing over his saucepans to three rival chefs in what's been named the Ramen Wars Volume One.
Silvereye's head chef and ex-Noma alumni Sam Miller, along with his sous chef (also ex-Noma) Tom Halpin will together go head to head with chef John Javier of Master (previously of Momofuku and Quay) in the ultimate ramen challenge. Miller and Halpin will be dishing up a smoked eel and ox tongue broth; Javier is being more strategic, revealing only that his ramen will feature traditional Asian flavours.
