"This is a golden age of tequila, says Patrón mixologist Tom Price. "Never before have so many quality tequilas been available on the market." That's certainly no understatement - ten years ago, people would have turned their nose up at the thought of a tequila cocktail, but now, it seems they can't get enough.

"Compared to a decade or two ago, it's much easier to find and purchase quality tequila," adds Price. "One hundred per cent agave tequila is now the industry standard, meaning you end up with a more flavourful and natural spirit rather than some of the lesser quality mixto tequilas of old." 

So what's the secret to whipping up a really great tequila cocktail? "Always use fresh ingredients and great quality spirits," says Price. "Additionally, use a recipe and measure your ingredients - a great cocktail can go wrong if you neglect these simple steps."

Tom's 3 cocktail suggestions

 1. Eau de Lavender

60mL: Patrón Silver
30mL lemon juice
30mL  lavender syrup*
4 dashes floral bitters
1 egg white

Pour all ingredients except the egg white into a shaker. Dry shake vigorously. Then, add the egg white and shake again to emulsify the egg white. Finally, add the ice and shake again, then strain into a short martini glass. Garnish with an edible flower.

*Lavender syrup: Add 2 cups of lavender into a pot, add 4 cups of water, bring to a boil, add 4 cups of sugar and stir until sugar has been dissolved. Let it simmer for about 20 minutes then infuse for about 48 hours.

2Patrón Mojito

45mL Patrón Silver
1 cut lime
30mL simple syrup
club soda
6-8 fresh mint leaves
lime wedge for garnish

In a tall glass, muddle mint leaves, lime, and simple syrup. Add a cup of ice and Patrón Silver and top with club soda. Stir gently. Garnish with a lime wedge.

3. Tommy's Margarita

45mL Patrón Silver 
20mL fresh lime juice
15mL agave nectar* 

Combine all ingredients in a cocktail shaker. Fill shaker with ice and shake forcefully for 20 to 30 seconds, until all ingredients are combined. Strain into a salt-rimmed glass over ice. Garnish with a fresh lime wheel.
