Sydney’s newest northern beaches all-star pub, The Collaroy, is now open

The beachfront Collaroy Hotel had long been a favourite destination of locals as a place to grab a bite to eat or a cool beverage straight off the sandy shores of beautiful Collaroy beach. But as with most long-time venues it was due a revamp. Enter Merivale, the current reigning champion of Sydney's foodie scene with all the best-in-class venues to their name including ultimate beachside destinations The Newport and Coogee Pavilion.
Since Merivale's CEO Justin Hemmes purchased The Collaroy Hotel in 2017, his team have been busily updating the venue adding their signature upgrades, think: designer décor, elevated food and drink options and cool spaces to chill with friends. And, drum roll, Merivale's The Collaroy is now open for business.
According to a press statement Merivale's newest northern beaches pub, "...celebrates everything the area is renowned for - sun-loving days, laid-back living and close-knit community spirit. Relaxed and fuss-free, it offers a variety of casual dining experiences for locals to meet, eat and grab a drink at the ocean's edge, a place where they can pop in after a swim and stay the whole day."
The interiors take their cues from the spectacular beachside setting with a focus on blue and green hues, just like the sea outside The Collaroy's front door.
As for the food, on the ground floor it's a beachy menu with multiple options depending on the time of day. Casual breakfast eats and drinks include artisanal coffee, juice, house-made pastries. Lunch is healthy salads and fresh bowls like the ocean trout bowl - a delish-sounding dish of hot smoked ocean trout, shaved brussels sprouts, boiled egg and sprouted grains. Dinner is comfort, home-style meals which change daily.
Heading upstairs you'll find the restaurant and two bars. The restaurant is serviced by an open kitchen all about fresh, seasonal seafood and mod Australian cuisine like whole snapper with garlic or grilled spatchcock with potatoes. If you're feeling like something more low-fi there's always the bar menu, which is easy burgers, snacks and salads.
But what would a Merivale beachside pub be without a pizza option? It wouldn't be a venue at all. So, of course, there's a dedicated pizza dining option, Vinnie's Pizza, powered by the in-house wood-fired pizza oven.
The Collaroy is located at 1064 Pittwater Road, Collaroy. Opening hours: Monday to Thursday 7.30 am - 12am, Friday and Saturday 7.30 am - 3am, Sunday 7.30 am - 11pm.
