It's every sommeliers' dream - an entire menu matched to an equally impressive list of local and international drops, with the option of taking home your favourite tipple or two after dinner. It's all on offer at new Toorak hotspot 505 Wine Room, which opened with a bang last night and already looks set to keep Melbourne's merrymakers more than happy.
The seasonal menu maps out exactly which style of wine pair best with each dish, taking the guesswork out of ordering drinks. Try a dry white with your local snapper, zucchini, fregola, peas and pinenuts, and a full-bodied red with your slow-cooked lamb shoulder, cumin yoghurt and Tunisian-style heirloom tomatoes. As for dessert - which includes churros with raspberry sorbet and chocolate dipping sauce and Violet Crumble honeycomb with chocolate Aero and violet ice-cream - only a sweet and fortified will do.
Design buffs will find the industrial luxe fit-out as drool-inducing as the food: the work of Ricky Smith, who specialises in luxury interiors and superyacht design, it's all exposed beams, bespoke steel work and indigo and aqua accents. Choose a seat at the main bar or opt for the ultra-plush cocktail lounge upstairs; 505 Wine Room is open every day from 12pm 'til late.
