Hotel Ravesis, the perfectly pink hotel perched on the quintessential corner of Campbell Parade and Hall Street in Bondi, has given its food and cocktail menu a delicious makeover just in time for summer. The menu revamp coincides with the first anniversary of the Bondi hotspot's relaunch, giving punters another reason to pop into picturesque Ravesis for summer drinks (like we needed one!).

Kicking off summer the right way; crisp, fresh rosé, pinot grigio and pinot noir will all be available on tap at the bar, among a more diverse wine list and amped-up cocktail menu. For the first time ever the team behind the bar will be infusing their own liqueurs in-house; think infused vodka, gin and tequila. Must-try cocktails include the high horse - a wasabi-infused Absolut with lavender, lemon and pineapple; fairy fluff - strawberries and cream-infused Absolut with Licor 43, apple, vanilla, lemon and a fairy floss garnish (hello Instagram opps!); chilli gringo - orange and chilli-infused Olmeca Altos, Licor 43, orange and lemon; and flower power -  hibiscus-infused gin, Contratto Bitter, rose, hibiscus and lime kombucha. In homage to the hotel's Italian roots, Hotel Ravesis has also launched a refreshing Aperitif list of boutique blends including Vincenzi Rays and Acqua Della Vitta.

The food menu has been designed for long relaxed lunches in the sun, with a focus on sustainable seafood options. Fish is filleted by hand each day and oysters are shucked to order. Highlights from the menu include; Crystal Bay prawns with sherry aioli (pair this with a glass of rosè on tap and you can thank us later); parmesan crumbed chicken schnitzel with seasonal slaw & tomato jam; and for something on the sweet side, choc-dipped hazelnut gelato bar and brownie bites.
