Taking inspiration from the 10 botanicals found in every sparkling blue bottle of Bombay Sapphire, Project Botanicals introduces its latest dream team: a gin and tapas night timed perfectly to farewell the last few rays of summer.

With an interactive lab on each table and a menu that's designed around the 10 exotic Bombay Sapphire botanicals: juniper berries from Tuscany, coriander seeds from Morocco, lemon peel from Spain, liquorice from the grassy plains of China, cassia bark from Indo‑China, Angelica from Saxony, Cubeb Berries from Italy, Almonds from Spain, Grains of Paradise from West Africa, and Orris from Italy - get set to go on a real sensory journey inside Sydney's prettiest park.

In addition to the tapas style dishes, you can sample cocktails crafted by some of Sydney's best mixologists from cool kid bars such as The Rook, The Barbershop and 360 Bar and Dining, plus Bombay Sapphire's own guru Sean Forsyth will also be on hand to answer any gin-related queries. Just want to stop in for a cocktail? Hit up the pop-up bar, running from March 2-12 on Thursdays, Fridays and Saturdays from 4-10pm.

Taking place throughout the month of March, tickets for the eight Project Botanicals pop up events are selling quickly now, so you'll want to get in before they sell out.
