Brought to you by Nina Gravelis, the daughter of the Fratelli Fresh founders, we're thinking Exchange Restaurant & Bar might be the best new Italian joint you've never heard of.
Trading in fresh, simple ingredients and dishes made the traditional way, the menu's ode to unpretentious Italian classics comes courtesy of head chef Sean Corkery, who spent eight years sharpening his knives as Fratelli Fresh Group's Executive chef. Coupled with Nina's tutelage under the masterful eyes of some of Australia's most awarded chefs (Luke Mangan, Neil Perry and Christine Manfield), Exchange Restaurant & Bar is already shaping up to be one of Darlinghurst's newest foodie hot spots.
While we don't want to let this persuade you (dishes like Pappardelle with Milk Braised Pork, Pecorino & Chilli and Risotto with Lobster, Mushroom & Caramelised Leek should do the trick anyway) the restaurant has already played host to the likes of Cheyenne Tozzi, AFL star Tom Derickx, and newlyweds Jesinta Campbell and Buddy Franklin. In addition to the Sydney celeb tick of approval, Exchange's wood-fire pizza oven, extensive vino and cocktail menu, and warm interior (inspired by New York's Balthazar and London's La Petite Maison) is another great reason to hightai it to the old Exchange Hotel site this weekend... see you there.
