History lesson: complete. Now you're free to mark the occasion with tacos and margaritas (and a sneaky tequila - it's Thursday, after all). SoCal in Neutral Bay are doing Taco Roulette, sriracha chicken and pork al pastor quesadillas north of the bridge, but for everyone else, Patrón has shared their recipe for a killer margarita below. In fact, it's been voted the best of the year - here's how to make it:

Spicy Rosa Picante Margarita
45ml Patrón Silver
15ml Patrón Citrónge Lime Liqueur
15ml fresh squeezed lime juice
15ml ginger syrup
Bar spoon of jalapeño oil
Dash rosewater
Rose petal sea salt

Combine all ingredients in a cocktail shaker and shake with ice to chill. Strain into a chilled cocktail coupe that has been half-rimmed with rose sea salt, and top with a dash of rose water. Garnish with a rose petal, if available.
