So far, so Bondi. The beachside suburb's latest opening is typical of its locale, but you can sense its staying power from the fervour of its owners, locals Joe Pags and Cam Price. The pair sought to "lift the coffee experience beyond the standard café fare," according to Pags, with a concept that elevates your morning latte to something altogether more special.

The beans? Organic and roasted on site in a cast iron and brass roaster custom-built in Germany. The coffee? Chilled cold-brewed on tap, or take your usual espresso, aeropress, sparkling or even 'shaken not steamed' care of some fast work with a cocktail shaker. The milk? Pags and Price make their own. "We serve almond macadamia mylk for ethical, environmental and health reasons and the response so far has been overwhelmingly positive," Pags says.

COFFEE Bondi Beach is also offering a subscription service, My COFFEE, for those who like their caffeine to come from home. "This is like Netflix for coffee," Pags tells us. "We deliver different coffee blends on a weekly or monthly basis, tailored to how you brew at home. [It] allows you to drink high quality coffee for a fraction of the price you would pay at a café."
