Afternoon cocktails just got interesting, thanks to a new champagne and cocktail bar which recently opened its doors in one of Sydney's harbourside suburbs. Located in a stunning heritage building on Hickson Road, Solera Bar trades in hard-to-find Champagne and cocktails that take your tastebuds into new territory.

With a capacity for 100 people, the small bar boasts the mixology skills of bartender Marian Beke (of The Gibson in London fame), and he's dreamt up deliciously inventive cocktails to boot. Consider Apple of Louisiana, a take on a Sazerac with apple brandy and absinthe jelly and a drop of rock sugar. You'll also find more Champagne brands than the usual Veuve and Moet, with the bar stocking out-of-the-ordinary brands like Leclerc Briant, Jerome Dehours, Benoit Dehu, Nicolas Maillart and ULYSSE COLLIN.

And - even better - the tables come with their own in-built cooling system. Not to be outdone by the drinks menu, chef Tony Gibson has created a menu filled with Rueben sandwiches, lobster rolls and cheese and charcuterie platters so which can be enjoyed as you explore the world-class cocktail menu.
