Earlier this year we called it - the aperitif is having a serious moment in the drinking and dining scene. With negronis getting some serious attention in bars around the country, it wasn't long before Italy's favourite cocktail sparked it's very own pop-up - enter, the Beach Club Aperol. Launching last night at Bondi's favourite beachside haunt The Bucket List, the Beach Club brings the orange-flavoured zest of Italy's Amalfi Coast to our fair Australian shores.

While certainly well-placed to attract Sydney's thirstiest (we're told local demand for the Aperol Spritz has grown 75 per cent in the last year alone), foodies are also being catered for by Bucket List's head chef Tom Walton. The Italian-inspired menu offers delights from the sea and land - such as Sydney rock oysters, house marinated olives, mushroom and mozzarella arancini, polenta and fennel-dusted calamari fritti with fresh aioli and lemon, plus - our personal favourite - San Danielle prosciutto share plates with parmesan grissini and olives.

Naturally, there'll be plenty of Aperol Spritz on tap, plus a few bespoke cocktails, such as the hot weather-appropriate Popsicle Spritz which comes with a delicious blood orange ice-block inside - winner. With a white, navy and Aperol orange décor echoing the vibrant Amalfi coastline, you can also relive your favourite The Talented Mr. Ripley moments, too (we talking cute vespas, lifebuoys and Gunther Rohn-designed surfboards, not murderous Matt Damon characters).

The Beach Club Aperol at The Bucket List is open daily from 2pm-8pm. A word of warning: don't wait too long to get down there - it's open until January 14, 2016 only.
