Named for the supremely scenic Road to Hana - a must-drive on glorious tropical paradise Maui - Little Collins Street's newest dining and cocktail destination channels all kinds of hang ten, paradise island vibes. With Hawaiian-born chef Mario Manabe behind the fresh menu expect sunny side up servings of raw seafood including natural oysters; poke salads (think: charred tuna, watercress, apple and citrus salad); hiramasa kingfish with jalapeño and lemon ice; snapper ceviche with kumquat and tigers milk (a citrus-based dressing that pairs perfectly with ceviche). And classic aloha desserts of lime cheesecake and frozen chocolate haupia pie.

But let's be honest, we're hitting this little slice of Hawaii for the cocktails, with a range of inspired island sips that'll truly transport you from dreary, grey winter to a sunshine state of mind. The list includes the 'Wailea Beach' a tequila, cointreau, lime, orgeat and bitters number reminiscent of that gorgeous stretch of sandy beach. Or, if you're a fan of the disaster/comedy made-for-TV-movie series Sharknado which marked Ian Ziering and Tara Reid's return to the screen - they've got you covered with their Honolua Bay 'sharknado' - a cocktail filled with dark rum, cointreau, orgeat, passionfruit, lime and orange juice.

Hana is located at 212 Little Collins St, Melbourne. Open from 12pm for lunch and dinner Monday through Friday and on Saturday from 4.30pm until late. Closed Sunday. hanarestaurant.com.au
