Details are intriguingly scant on the new watering hole, but a newly minted sign on the window of the previous Hinky Dinks address on Darlinghurst Rd provides, at the very least, a GPS location. Marcelo, Peter and Michael - the gents behind Buffalo and now Johnny Wishbone - have kept the new venue on the serious DL, but according to a breaking story in Broadsheet, a ton has been going on behind the scenes because... Johnny Fishbone is set to open today, Thursday 23 February, from 5pm.
Where The Buffalo Dining Club is anchored around the melt-in-your-mouth, creamy, ever-versatile Italian staple, buffalo mozzarella, which they import weekly fresh from Campania in Italy, Johnny Fishbone will be serving up Spanish tapas alongside an extensive and carefully curated wine list. The web presence is low-to-no at the moment, their website teasing that it's "coming soon" and there are no Instagram posts @johnnyfishbonesydney, but don't let that deter you from heading there today for first place, wine parlour bragging rights.
Johnny Fishbone Wine Parlour is located at 185 Darlinghurst Rd, Darlinghurst and will be opening Tuesday-Saturday from 5pm until late from February 23.
