Ever met a tostada you didn't like? Us either, but until recently trying to find an authentic plate of delish south of the border cuisine in our harbour city has been like the proverbial needle in a haystack. Which is why the opening of a hot Mexican restaurant is something to get excited about.

Chula Kings Cross

Chula is located on the iconic Bayswater Road site where Hugo's Pizza used to reside (so many memories!) and comes from the hospitality crew, Peter Lew and Nicole Galloway, behind Barrio Cellar and cool Cantonese diner Fei Jai. In the kitchen is chef Alvaro Valenzuela, who is fresh off the plane from Mexico City where he worked in a number of Mexican eateries.

As for the menu, Valenzuela is introducing a different style of Mexican, less Tex-Mex more refined, inspired by his grandmother's kitchen, "She taught me everything in life should be done with love and that includes cooking... There's a lot of love in everything I create - from a simple taco to a more complex dish," he said in a press statement.

Delish, authentic eats include scallop aguachile, chorizo tlayuda, seafood tostada, and charcoal-cooked plates of whole snapper and beef short ribs.

It wouldn't be a proper Mexican feast without a stellar cocktail to go with and Chula has brought in the founder of The Agave Cartel, Reece Griffiths to mix up perfect cocktail pairings featuring agave spirits and indigenous Mexican ingredients.

Chula is located at 33 Bayswater Rd, Kings Cross. Opening hours are: Wednesday, Thursday and Sunday from 5pm-12pm, Friday and Saturday 5pm-2am.
